Ingredients for 4 servings

3 cups grilled chicken, chopped

2 celery stalks, diced

1 red bell pepper, diced

1/2 cup raisins

1/2 cup pistachios, shelled, chopped

1/4 cup cilantro, chopped

1/4 cup feta, crumbled

1 small red onion, diced

1/4 cup olive oil

1 orange, juiced

1 teaspoon lemon juice

1 teaspoon soy sauce

1/4 teaspoon salt

1/4 teaspoon paprika

1/4 teaspoon cumin

1/4 teaspoon cinnamon

Preparation

1.

In a small bowl, whisk together dressing ingredients. In a large bowl, combine all salad ingredients. Coat lightly with dressing and stir to integrate. Serve cold.
