1 lb of your favorite raw shrimp
3 Tbsps Chili Oil
2 tsps Salt
2 Ice Cubes
zest of 1 lime
1/2 tsp Pepper
1 Tbsp Minced Garlic in Oil
1/4 Cup of Honey
1/2 tsp Garlic Powder
1 tsp Minced Cilantro
1 Tbsp White Vinegar
1/2 tsp Curry Powder
1/2 tsp Paprika
1 Ripe Avocado
Steam shrimp in a double boiler until they are just turning pink, then immediately remove from the heat and add to a large bowl.
Add the 2 ice cubes and stir to bring the temperature down on the shrimp.
Add the chili oil, 1 teaspoon of the salt, the juice of 2 limes, pepper, minced garlic, garlic powder, honey, vinegar, and curry powder.
Mix very well to evenly coat the shrimp with the marinade. Add the paprika, cilantro, and half of the lime zest. Mix gently.
Citrus Lime Avocado Puree- In a bowl place the avocado flesh (peeled & seeded) add the remaining teaspoon of salt, the juice of 1 lime, and the other half of the lime zest. mash thoroughly until the mixture is smooth and creamy.
Refrigerate in the bowls at least 2 hours before serving.
