  • 1 cup dried apricot, diced
  • 2 bunches green onions , chopped
  • 1 lemon
  • 2 small zucchini , cut into 1 inch cubes
  • 1 (16 oz) can of drained black beans
  • 1 cup fresh mint , chopped
  • 4 Tbsps olive oil
  • 2 cups quinoa
  • 1 cup dried cranberries (and or or cherries)
  • 1 cup fresh parsley , chopped
  • 1 butternut squash , peeled and diced
  • 2 bay leaves
