2 cups Arborio rice

Freshly ground black pepper

Finely ground sea salt , preferably gray salt

1 tablespoon minced fresh thyme (optional)

Peanut oil for deep-frying

1 cup dry white wine

2 or 3 large eggs

3½ cups water

1 cup finely chopped yellow onion

1½ cups fine dried bread crumbs

1 cup all-purpose flour

½ pound baby spinach

1 tablespoon minced garlic

1/8 teaspoon powdered ascorbic acid (vitamin C) (optional)
