1/4 cup minced fresh coriander , for garnish

1/4 cup low-fat buttermilk or evaporated milk

2 teaspoons minced jalapeno peppers, to taste

1 bay leaf

2 garlic cloves , minced

freshly ground nutmeg , to taste

2 cups potatoes , peeled and cut into 1-inch cubes

6 cups chicken stock
