Ingredients

2 1/4 pounds boneless, skinless chicken thighs

marinade:

4 cups buttermilk

2 cups whole milk

4 medium garlic cloves minced or microplaned

2 tablespoons chopped fresh thyme

1 teaspoon old bay seasoning

1 teaspoon kosher salt

1 teaspoon ground black pepper

1 teaspoon paprika

Dredge:

4 ounces Wondra flour, about 1 cup

6 ounces cornstarch, about 2 1/4 cups

4 ounces white rice flour, about 3/4 cup

3/4 ounce old bay seasoning, about 3 tablespoons

3/4 ounce kosher salt, about 3 tablespoons + more to finish

1/4 teaspoon ground black pepper + more to finish

1/4 teaspoon garlic powder

1/4 teaspoon cayenne

2 quarts rice bran oil or canola oil, as needed

Salt and pepper to taste

Garnish (optional)

green onions sliced thinly on the bias, green portion only

--buttermilk dipping sauce
