Ingredients for 5 servings

1-2 tbsp Olive Oil

1 x sweet yellow onion, diced

2 x carrots, diced

3 oz pancetta, chopped

4 x cloves of garlic, minced

Sea salt and freshly cracked pepper, to taste

1 tbsp tomato paste

1 14 oz diced tomatoes, with juice

2-3 cups fresh kale, chopped

1 15 oz white cannellini beans, drained and rinsed

1 tsp dried basil

1 tsp dried oregano

6 cups chicken broth

1 x bay leaf

2 inch Parmesan rind

1 cup whole wheat spaghetti, broken into 1 inch pieces

Grated Parmesan, for serving
