5 plum tomatoes
8 sprigs thyme
1 tbsp olive oil
2 tbsps balsamic vinegar
Preheat your oven to 275 degrees
Quarter plum tomatoes vertically and place skin side down on parchment paper
Sprinkle thyme sprigs then balsamic and salt on the tomatoes.
Roast for 90 minutes on the lower middle rack of the oven
Remove the thyme sprigs then eat as an appetizer on crackers or as an ingredient in salads.
