Ingredients

1 tablespoon extra virgin olive oil

2 cloves garlic, peeled and crushed

4 pounds heirloom tomatoes (any variety) peeled, cored and coarsely chopped

1 teaspoon fresh thyme leaves

1/2 teaspoon fine sea salt

1/4 teaspoon paprika

1/8 teaspoon cayenne pepper

2 tablespoons fresh lemon juice

1/4 cup chopped white onion

4 stalks celery, chopped

4 basil stems with leaves (each about 6 inches long), bruised

1/2 cup cold water

5 teaspoons powdered gelatin (two 1/4-ounce packets)

Dressing and salad

1/2 cup mayonnaise

1 tablespoon minced tarragon

2 tablespoons lemon juice

10 medium-size butter lettuce leaves
