Sweet Potato Salad

Ingredients for 2 servings

1 cup spinach

1 cup kale

8  mini pink tomatoes

4 mini radishes

1 zucchinis

1 medium sweet potato

1 tsp rosemary

1/2 tsp salt

1/2 tsp pepper

1 tbsp olive oil

vinaigrette

Preparation

1.

Slice spinach and kale into strips.

2.

Slice tomatoes into half.

3.

Thinly slice radish

4.

Toss the above into a medium mixing bowl in lemon vinaigrette dressing.

5.

Wash and dry sweet potato. Cut into wedges and mix well with olive oil, salt and pepper.

6.

Line sweet potatoes flat and bake for 30-40 mins

7.

Plate them and enjoy!
