2 cups fresh spinach, or around 1 1/2 big handfuls
1 carrot, sliced
1 small capsicum or bell pepper
2 boiled eggs, sliced
3 rashers of lean bacon, chopped
3 teaspoons homemade dressing.
Homemade Dressing - This dressing is a staple for me, super simple, 1:1 mix of good virgin olive oil and balsamic vinegar, add your favourite dry herbs to taste. I personally use garlic powder, ground coriander seeds, basil, oregano and a pinch of salt.
Place spinach in bowl as bed, peel and warm eggs in microwave as desired. Cook the bacon on paper towel in the microwave, the paper towel helps remove a lot of the natural fats you would normally cook in on a pan. Slice capsicum and carrot sprinkle of spinach, place warmed egg and bacon over the top, drizzle dressing around and you’re done. Get stuck in and enjoy a tasty, healthy, energy and protein packed lunch
