Ingredients for 8 servings

2 tablespoons caraway seeds , toasted and ground

1 3/4 cups milk

6 cups low sodium chicken broth or low sodium beef broth

1 tablespoon sugar

2 tablespoons balsamic vinegar

3 tablespoons sweet Hungarian paprika

1 teaspoon salt

2 1/2 lbs beef shank or beef shoulder, cut into 2-inch cubes

4 egg yolks

1 egg

1/4 teaspoon fresh ground pepper

1/2-3/4 teaspoon of minced fresh thyme (optional)

SPATZLE

3 tablespoons all-purpose flour

chopped flat leaf parsley , for garnish

4 cups onions , thinly sliced

1 bay leaf

3/4 cup sour cream (add more if necessary)

1/4 teaspoon nutmeg

2 tablespoons extra virgin olive oil

3 garlic cloves , minced

1 lb all-purpose flour (about 3 cups)

2 roasted red peppers, peeled and sliced

fresh ground black pepper

salt

3 ounces unsalted butter or unsalted margarine

1/2-1 teaspoon minced fresh marjoram (optional)

4 slices bacon , chopped

GOULASH

kosher salt

1 (15 ounce) can whole canned tomatoes , hand crushed
