1/4 teaspoon salt

4 ounces sharp cheddar cheese, shredded (1 1/4 cups)

2 tablespoons cold unsalted butter, cut into small pieces

1 large egg, lightly beaten

Egg wash: 1 large egg yolk lightly beaten with 1 tablespoon of milk

Demerara or Turbinado sugar
