zest of 2 lemons and 2 limes

sea salt and freshly ground black pepper

1 fresh red chilli finely chopped

2 large free range or organic eggs

sunflower oil for deep frying

a big bunch of fresh flat leaf parsley finely chopped

140 ml milk

a handful of fresh mint finely chopped

2 bay leaves

1 teaspoon fennel seeds bashed
