Ingredients for 6 servings

6 pounds of skirt steak, sliced into 6 inch long pieces

8 limes, juiced

2 garlic cloves, minced

1/4 cups of olive oil

5 teaspoons of ground cumin (many recipes call for cumin seeds, but I don’t like it when spices linger behind and get stuck in the teeth. I opted for powder. Just make sure it is not older than 6 months or it will have less flavor.)

1 teaspoon of ancho chili powder

1 teaspoon of kosher salt

1/2 teaspoon of black pepper
