1 ounce tamarind pulp in block form, or several tablespoons tamarind concentrate from a jar

9 to 10 ounces moth beans, or green/brown lentils

5 garlic cloves, thinly sliced

1/2 teaspoon turmeric

1/4 to 1/2 teaspoon cumin

1/2 teaspoon paprika

1 to 2 fresh chiles, preferably small Asian or Indian ones

Salt to taste

2 green onions, trimmed and thinly sliced

1 bunch cilantro, chopped (about 2/3 cup chopped)
