-- Kosher salt and pepper to taste

1 (5-ounce) can albacore tuna in oil

-- About 2 tablespoons minced celery

2-3 tablespoons minced red onion

1-2 teaspoons capers, rinsed and chopped

1/2- 3/4 teaspoon sherry vinegar or lemon juice to taste

1 (14-ounce) jar Peppadew peppers (see Note)

-- Chopped parsley to garnish (optional)
