3 oz Dried soba noodles

2-4 tbsp miso paste (to taste)

2-3 oz firm tofu, chopped into 1/3-inch cubes

a handful watercress or spinach, well washed and stems trimmed

2 x green onions, tops removed thinly sliced

a small handful cilantro

a pinch red pepper flakes
