  • 3 oz Dried soba noodles
  • 2-4 tbsp miso paste (to taste)
  • 2-3 oz firm tofu, chopped into 1/3-inch cubes
  • a handful watercress or spinach, well washed and stems trimmed
  • 2 x green onions, tops removed thinly sliced
  • a small handful cilantro
  • a pinch red pepper flakes
