  • 1 lb zucchini
  • 1/2 cup shredded cheddar cheese
  • 1 Tbsp ketchup , of choice
  • 1/4 cup feta cheese
  • 1 Tbsp italian herb seasoning
  • 1 1/2 cups chopped fresh tomatoes
  • olive oil flavored cooking spray
  • 4 garlic cloves , minced
  • 1 whole egg
  • 1/2 cup chopped portabella mushroom
  • 8 ozs part-skim ricotta cheese
  • 1 cup chopped onion
  • 1 tsp garlic powder
