Ingredients for 4 servings

1/4 cup Olive Oil

4 x cloves roasted garlic

1 tbsp Lemon Juice

1 medium loaf French or Italian bread (little less than 1 lb.), stale and torn or sliced into bite sized pieces

1/3 cup blanched, slivered almonds

4 x cloves garlic, peeled and crushed

3/4 lb silken tofu (fresh, not vacuum packed is best)

3 tbsp Lemon Juice

1 tbsp Capers

4 tsp caper brine

1 tsp sugar

1/2 tsp dry mustard powder

salt to taste

1 large head Romaine lettuce, chopped

Freshly cracked black pepper

Arugula choppOptional: Handful or two of Spinach and Arugula, well-washed. spun dry and torn into bite-sized piecesed
