2 tablespoons chopped fresh basil

1 small eggplant, peeled and diced (5 to 6 cups)

1 tablespoon chopped fresh oregano

1 clove elephant garlic, minced, or 3 cloves regular garlic, minced

2 tablespoons grated Parmesan

Salt and pepper, to taste

4 tamarillos, any variety, peeled and diced

1 1/2 cups chicken broth

1 red, yellow or orange bell pepper, chopped

1 1/2 cups sliced mushrooms
