5-6 dried shiitake mushrooms

1/2 cup sake

1 cup warm water

5 medium-size tomatoes

1 tablespoon olive oil

1 tablespoon butter

2 tablespoon shallots, diced

1 tablespoon garlic, minced

1 medium yellow bell pepper, diced

1/2 cup Japanese panko (bread crumbs)

1/2 cup roughly crushed fried wide chow mein noodles (see Note)

1 teaspoon sesame oil

1/2 teaspoon chile oil (more if you like it spicier)

1/2 teaspoon maple syrup

2 tablespoons Italian parsley, chopped

Salt and pepper

1/3 cup goat cheese

4 tablespoons nori komi furikake (sesame seed and nori mixture, see Note)
