2 lb skinless, boneless chicken breasts and/or thighs, roughly chopped into bite-size chunks

3 15-oz cans Cannellini beans, drained and rinsed

1 large sweet onion, chopped

2 4-oz cans chopped green chiles

3 heaping Tablespoons canned 100% pumpkin

2 cup fresh or frozen corn

3 x cloves of garlic, minced or smashed

1 3/4 cup low-salt chicken stock

1 12-oz can low-fat evaporated milk

4 tbsp olive oil

1 tbsp chili powder

1 tsp cumin

1/2 tsp black pepper

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

Salt and pepper to taste

2 tbsp fresh cilantro, chopped (optional)

3/4 cup sharp cheddar, grated (optional)
