Ingredients

olive x oil

1 kgin total of mussels and x clams

Ahead of fennel trimmed and finely chopped leafy tops x reserved

700 grisotto x rice

4 garlic cloves peeled and finely x sliced

200 mlwhite x wine

Asmall bunch of fresh flat leaf parsley leaves picked and stalks finely chopped x chopped

Ahandful of dried morels soaked in a little hot x water

1 x 400g tin good quality plum x tomatoes

1 fresh red chilli deseeded and finely x chopped

2 sticks of celery trimmed and finely x chopped

1 onion peeled and finely x chopped

Alittle parmesan to x serve

Zestand juice of 2 x lemon

15 litres chicken or vegetable x stock
