1 medium sized potato , peeled and finely sliced

500.0ml double cream

2 celery sticks

500.0ml chicken stock

400.0ml white wine (preferably sauvignon blanc)

2.0kg mussels , picked and washed

chives , chopped to decorate

1 pinch of saffron threads

1 onion

1 leek (you'll only need the white part)

100.0g unsalted butter

1.0 tsp mild curry powder

1 bouquet garni of thyme

1 pinch of cayenne pepper
