6 whole black peppercorns

18 pink peppercorns, lightly crushed

1 pn salt

1 oz fresh orange juice

1 T lime zest

1 oz lime juice

1 t ginger, peeled and grated

1 oz rice vinegar

1 T vegetable oil

0 salt and pepper

2 (6 ounce) fillets of artic char (skin on)
