Ingredients for 4 servings

1/4 cup chopped fresh cilantro

3/4 cup chopped Spanish onion

2 1/2 teaspoons curry powder

2 idaho potatoes , peeled cut into 1 inch cubes

salt and pepper

1 (15 ounce) can pumpkin

1 teaspoon ginger (i add this cause i like the taste of ginger, but you can skip it)

4 cups fat-free low-sodium chicken broth or vegetable broth

2 teaspoons olive oil

1 tablespoon heavy whipping cream or half-and-half
