1 x onion, chopped coarsely

29 oz. can 100% pumpkin (not pumpkin pie mix)

30 oz part skim ricotta

2 tsp minced garlic

1 cup chopped walnuts

1/2 cup mozzarella

1 cup grated parmesan

1 tbsp white wine

1 tbsp fresh thyme

1/4 tsp dried sage

1 tsp brown sugar

1/4 tsp salt

Salt and pepper to taste

1 tsp olive oil

1 tsp minced garlic

3 tbsp unsalted butter

5 tbsp flour

4 cup low-fat milk

Pinch of nutmeg

1/8 tsp pepper
