2 apples , sliced through the middle into circles (no need to core them)

5.0 tbsp Calvados

50.0ml milk , hot

6 shallots , thinly sliced

1.0 tsp sugar

500.0g potatoes , maris piper or King Edward, peeled

a small bunch of chives , snipped

125.0ml apple juice
