6 oz. feta, coarsely crumbled

Freshly ground black pepper

1 lemon, sliced into wedges

1-1/2 cups medium bulgur

3 Tbs. chopped fresh mint

1-1/2 cups canned chickpeas, rinsed and drained

3 Tbs. chopped fresh flat-leaf parsley

1/2 cup finely sliced sun-dried tomatoes (if not oil-packed, rehydrate)

1/2 tsp. ground cumin

1 small cucumber, peeled, seeded, and chopped into small dice

Juice from 1/2 lemon (about 2 Tbs.); more to taste

Kosher salt

1/4 cup extra-virgin olive oil
