2 lb rhubarb, trimmed and chopped into roughly ½-inch chunks Juice of ½ an orange

2 x eggs, separated

2/3 cup (plus 1/2 cup) granulated sugar

2 tbsp unbleached all-purpose flour

2 tbsp unsalted butter, melted

1/4 tsp cream of tartar
