4 pounds boneless beef chuck

roast, or a combination of boneless chuck and beef shank

2 onions

3 carrots, cut in chunks

8 thyme sprigs

2 bay leaves

1 rosemary sprig

2 teaspoons salt

1 to 2 tablespoons freshly ground pepper

4 garlic cloves

A 4 x 1/2-inch strip orange peel

1 bottle (750 ml) dry red wine, such as Zinfandel or Cabernet Sauvignon

1/3 cup minced salt pork

Vegetable oil, as needed

2 tablespoons flour

1 cup water

2 ounces dried shiitake mushrooms, some broken into 2 or 3 pieces, other left whole, rinsed
