Ingredients for 6 servings

2 tbsp canola oil

2/3 cup quinoa

1 x carrot, diced

1/2 x onion, finely chopped

1 small head cauliflower, chopped

1/2 x green bell pepper, seeded and chopped

2 cloves garlic, crushed

2 cups vegetable stock

3 1/2 cups water

8 canned whole peeled tomatoes, chopped

4 tbsp tomato sauce (from the can with the tomatoes)

1 1/2 cup chinese cabbage, sliced

8 x basil leaves, torn

2 x bay leaves

4 shakes Italian Seasoning

2 cups baby spinach

salt and pepper to taste

1/4 cup parsley, for garnish
