Ingredients for 2 servings

a bunch of fresh spinach leaves

500 gm of cottage cheese (indian paneer)

cumin seeds

red pepper flakes

salt (acc. to taste)

butter ( a bowl)

1 red onion finely chopped

5 gm of ginger finely chopped

1 tomato finely chopped

Preparation

1.

1. chop spinach leaves 2. boil them in pressure cooker or steam for 15-20 min 3. strain the water and grind the boiled spinach in grinder making paste ; a bit coarse not too fine 4. cut the paneer into small cubes. 5. take butter in a pan and fry the cubes till golden brown 6. now remove the cubes from pan and use the same butter to fry onion cumin and ginger until brown. 7. now add tomato and fry for a while until tomatoes completely get mashed. you can add a pinch of salt to quicken the cooking of tomato 8. add red pepper, salt accordingly. 9. add spinach paste and paneer cubes. 10. mix well and cover it . 11. let it simmer for few mins. 12. delicious palak paneer is ready.
