1 small Spanish onion, diced (1 cup)

3 cloves garlic, minced (1 Tbs.)

2 tsp. dried oregano

1 small red bell pepper, diced (1 cup)

1 14.5-oz. can whole tomatoes, coarsely chopped, juice reserved

1 small Yukon gold potato, peeled and diced (1 cup)

1 small sweet potato, peeled and diced (1 cup)

1/2 cup fresh or frozen corn kernels

1 15-oz. can kidney beans, rinsed and drained
