410 g tin chickpeas in water by Sainsbury's, drained and rinsed

1 red chilli, sliced

2 teaspoons mild curry powder by Sainsbury's

½ x 28g pack fresh parsley by Sainsbury's, washed

½ x 31g pack fresh coriander by Sainsbury's, washed, plus extra leaves to garnish

2 medium British free range Woodland eggs by Sainsbury's, beaten

150 g golden breadcrumbs by Sainsbury's

2 tablespoons olive oil by Sainsbury's

4 wholemeal pitta by Sainsbury's, sliced in half

4 tomatoes (260g), washed, deseeded and diced

1 bunch of spring onions, washed, trimmed and finely chopped

1 tablespoon Sainsbury's white wine vinegar

1 mango, peeled, stoned and diced

Lemon wedges, to serve (optional)
