1/2 cup red wine

1/2 vanilla bean, split and scraped

1 sprig rosemary

8 medium or 12 small gala or tart-sweet apples, cored, peeled and sliced very thin

2 oz gorgonzola dolce crumbled

1 cup all-purpose flour

2/3 cup walnuts

3 tbs. sugar

1 stick butter

1/3 cup cake flour (not self-rising)

1/2 tsp. Salt

4-5 tbs. Ice water
