3 large red bell peppers

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil

Fine sea salt and freshly ground black pepper to taste

Liptauer

1 cup quark cheese (or farmer's cheese smoothed in a blender)

1/2 cup goat cheese

1/2 cup finely grated ricotta salata

1 shallot, minced

1/2 garlic clove, mashed to a paste

1 tablespoon + 1 teaspoon finely chopped cornichons

1 tablespoon finely chopped chives

1 tablespoon finely chopped parsley

1 tablespoon finely chopped capers

2 teaspoons fresh lemon juice

1 1/2 teaspoons sweet Hungarian paprika

Garnish

Parmigiano-Reggiano, shaved with a vegetable peeler

Fresh parsley leaves
