2 oranges or 4 tangerines or other small winter citrus fruit, seeded

8 chicken thighs, boned

1 tablespoon lemon juice, or as desired

Salt and pepper (go a bit easy on the salt because of the prosciutto)

4 garlic cloves, chopped

10 to 15 sage leaves, most cut into very thin slices or chopped, a few whole leaves set aside for garnish

1 to 2 tablespoons extra virgin olive oil

4 slices of prosciutto, each one cut in half (4 ounces total)

1/4 cup dry white wine

1 large, very red-skinned pomegranate
