Ingredients

6 tablespoons (3/4 stick) margarine or butter substitute

1 medium leek, white and light-green parts only, cleaned, then finely chopped (1/2 cup)

Large handful of flat-leaf parsley leaves, finely chopped (1/2 cup)

About 15 chives, finely chopped (1/4 cup)

4 large eggs

1 1/4 cups plain matzoh meal, preferably Streit's

1/2 cup plain club soda or plain seltzer water

1/2 to 1 teaspoon salt

1/4 teaspoon freshly ground black pepper
