Zest of 1/2 lemon

Zest of 1/2 orange

4 tablespoons freshly squeezed lemon juice

2 tablespoons freshly squeezed orange juice

Sea salt, to taste

Freshly ground black pepper, to taste

1/3 - 1/2 cup extra virgin olive oil or grapeseed oil

1/2 cup pistachios, roasted and roughly chopped*

1/4 cup fresh mint, finely chopped
