1 T. chopped ginger

¼ c. rice, white, basmati or Arborio (If you want to use brown, use cooked rice, and add it toward the end of cooking)

1 bunch collard greens, roughly chopped

1 bunch kale, roughly chopped

1 bunch spinach, roughly chopped

Chopped, fresh, soft herbs — cilantro, parsley, thyme, tarragon, basil (whatever you like)

Pinch of cayenne

Salt & Pepper

Tofu, cubed (optional)

Lots of fresh lemon juice
