Ingredients for 2 servings

1 tbsp light olive oil

1/2 tsp Cumin Seeds

1/2 tsp Turmeric

2 x large green chillies, such as jalapeno, minced

1 x medium onion, finely sliced

1/2 pint Cherry Tomatoes, sliced in half

16 x large shrimps

1/2 cup Coconut Milk

small handful of Thai basil leaves, I used regular basil which i cut in a chiffinade

salt and freshly ground pepper to taste
