7 graham cracker sheets, ground in a food processor to texture of fine crumbs, about ¾ cup crumbs

1 tablespoon sugar

3 tablespoons butter, melted

For filling

2 lb ricotta

6 large eggs, separated

¾ cup sugar

3 tablespoons all-purpose flour

2 tablespoon minced candied orange peel

½ teaspoon orange extract

½ teaspoon cinnamon

2/3 cup shelled unsalted pistachios (not dyed red), chopped

4 oz bittersweet chocolate (not unsweetened), chopped (1 cup)

pinch salt
