Ingredients for 8 servings

4 tbsp Peanut Oil

75 g dried shrimp

100 g tofu, diced

2 x eggs, lightly beaten

1/4 x bunch kuchai (Chinese chives)

250 g bean sprouts

125 g ellophane noodles, cooked, rinsed with cold water

6 x small red Thai chilli peppers, finely chopped

5 tbsp fish sauce

1 1/2 tbsp sugar

2 tbsp ground peanuts

3 tbsp lime juice

1 tsp Paprika powder

1 litre Water

500 g spinach

2 x eggs

500 g flour

2 tbsp oil

1 1/2 tsp salt

Peanut Oil for frying

1 x sachet squid ink

16 x gambas (large prawns), cleaned

1 tbsp fish sauce

1/2 litre green coriander curry

1/2 litre basic curry, blackened with a sachet of squid ink
