Pastry Dough:

1 cup flour

2 tablespoons yellow cornmeal

1 teaspoon sugar

1/4 teaspoon kosher salt

7 tablespoons (3 1/2 ounces) unsalted cold butter

1/4 cup ice water

Fruit:

3 small (5 ounces each) Golden Delicious apples, peeled, cored, halved, and sliced 1/8-inch thin (you'll need 4 cups)

3 tablespoons granulated sugar

1/2 teaspoon cinnamon

1/4 teaspoon ground allspice

1/3 cup coarsely chopped toasted walnuts

2 tablespoons unsalted butter, melted

2 ounces quince paste (see Note)
