4 cloves of garlic finely sliced

2 tablespoons sunflower or groundnut oil

4 tablespoons soy sauce

4 x 200g 7oz duck breasts

4 oranges zested and segmented

2 large handfuls of thin asparagus trimmed

sea salt and freshly ground black pepper

a handful of fresh mint leaves picked

2 thumb sized pieces of fresh ginger peeled and grated

1/3 fresh red chillies deseeded and finely sliced

2 teaspoons five spice

2 large handfuls of sugar snap peas or mangetouts

1 tablespoon honey
