1/2 pound Arborio rice

1/2 cup Parmesan cheese

1 bay leaf

4 cups chicken stock or canned broth, warm

2 tablespoons olive oil

2 tablespoons unsalted butter

1 tablespoon chopped garlic

1 teaspoon salt

1 large onion, diced

1 teaspoon freshly ground black pepper

1 ounce dried porcini mushrooms

1/4 cup brandy
