Ingredients

2 cups slightly stale breadcrumbs (size of a pea), preferably from sourdough or sturdy French bread

2 tablespoons olive oil + more for cooking

1 pound fresh crab meat

2/3 cup finely chopped celery

1/2 cup finely chopped red onion

1 1/2 teaspoons worcestershire sauce

1/4 cup finely chopped parsley

2 tablespoons fresh chopped thyme

1 tablespoon dijon mustard

1 teaspoon Tabasco sauce

1/2 teaspoon red pepper flakes

Salt and freshly ground pepper to taste

3 eggs, separated

tartar sauce (see recipe)
