I love these! They disappear at work super quick. For melting the white chocolate I make a double boiler with a bowl over a pot of simmering water. I have bad luck with burning the chips in the microwave. I also cut back a bit on the flour in the frosting so it stays creamier. And beat the heck out of the frosting so that it's not too gritty. As with all baking, it helps to have all ingredients at room temp before you begin (for the note on the recipe that these "didn't work" for some folks).

1 cup all purpose flour

1/2 teaspoon kosher salt

1/2 teaspoon baking soda

1 cup granulated sugar (you can reduce to 1/2 cup sugar)

1 cup white chocolate chips

2 eggs

1/2 cup sour cream

1/2 cup vegetable oil

1 teaspoon vanilla extract

8 tablespoons (1 stick) softened unsalted butter

1/2 cup granulated sugar

1/2 cup packed light brown sugar

1/4 teaspoon kosher salt

1/4 teaspoon vanilla

1-2 tablespoons milk if needed to thin out dough

mini chocolate chips

mini chocolate chip cookies for garnish
